En \u00e9sta, las hojas marchitas se someten a altas temperaturas para detener su oxidaci\u00f3n, desactivando las enzimas responsables de la misma.<\/p><p>En el caso del t\u00e9 amarillo, la fijaci\u00f3n se realiza a trav\u00e9s del m\u00e9todo chino de fijaci\u00f3n sha qing, tambi\u00e9n conocido como proceso de tostado en sart\u00e9n.
