Contrairement aux autres th\u00e9s, le Pu-erh subit un processus de fermentation microbienne contr\u00f4l\u00e9e qui transforme profond\u00e9ment son profil chimique et sensoriel.<\/span><\/p><p><span style=\"font-weight: 400;\">Ce proc\u00e9d\u00e9 unique transforme le Pu-erh en un th\u00e9 qui \u00e9volue au fil du temps, d\u00e9veloppant des couches complexes de saveurs et d&rsquo;ar\u00f4mes, le rendant comparable \u00e0 des produits tels que le vin ou les fromages affin\u00e9s.<\/span><\/p><p><span style=\"font-weight: 400;\">Sur le plan botanique, le Pu-erh est \u00e9labor\u00e9 \u00e0 partir du th\u00e9ier Camellia sinensis var. assamica, une vari\u00e9t\u00e9 \u00e0 grandes feuilles originaire du Yunnan.
