Small Darjeeling cakes


A juicy and tender extra for the tea time

Preparation time: 20 minutes
Baking time: 25 minutes

Ingredients (for 4 persons):
200 ml black tea Darjeeling
80 g butter
230 g flour
2 teaspoons baking powder
100 g sugar
150 g cream cheese
2 eggs
50 ml orange brandy

Brew tea as described. Melt butter in a pot. Stir in flour and baking powder. Mix half of the tea with sugar, cream cheese and a pinch of salt and stir in eggs one by one. Add flour mixture.
Fill the dough into small moulds and bake in preheated oven 20-25 minutes at 180°C. After baking stir rest of tea with the brandy and drizzle over the still warm cakes.
