Ingredients
For the chai pancakes:
2 tsp Alveus Winter Chai
150 g flour
100 ml milk
200 ml natural yoghurt
2 tbsp sugar
1 packet of baking powder
3 eggs
Pinch of salt
For the candy-apple compote:
2 tsp Alveus Candy Apple
3 apples
1 tbsp sugar
100 ml water
Method
For the pancakes: Fill a teabag with the tea and heat it with the milk in a saucepan. Let it steep and set aside.
For the compote: Fill a teabag with the tea, pour over the hot water, then let it steep as well. While the teas are steeping, wash, peel, core and chop the apples, then put them in a saucepan. Then add the sugar and tea and let the mixture simmer gently. If you like, you can also add cinnamon, vanilla or other spices. Stir occasionally. The compote is ready when the apples have softened.
While the compote is simmering, beat the eggs in a bowl until they are pale and fluffy. Then add the chilled milk to the yoghurt and stir.
Put the dry ingredients in a bowl, mix thoroughly and slowly add this to the beaten eggs. Stir in the milk-yoghurt mixture until a thick, viscous dough comes together. If it’s too thick, stir in a little more milk.
Over medium heat, fry the pancakes in a bit of oil on both sides.
Serve the fresh pancakes with a helping of hot apple compote.
